The essence of Neapolitan pizza is high heat cooking for a short period of time. At Pompeii Pizzeria we cook at 750 degrees Fahrenheit for about two minutes. Less is more when it comes to adding toppings to Neapolitan pizza. Light and fresh toppings balance the delicate crust and achieve the unique flavors from the high temperature cooking.

Fresh herbs and quality vegetables are all necessary to achieve flavor and texture without overloading the delicate crust. The result is a light and tender pizza with a perfect ratio between crust and toppings.

The focus at Pompeii Pizzeria is artisan produced Neapolitan pizzas and quality salads. Our 3600 pound ceramic oven operates at 750 degrees or higher during business hours.  

We mix small batches of artisan dough in house throughout the day so that our dough is always at the right stage of development for the perfect pizza crust. Pizzas crusts are stretched and shaped by hand to order.
